I think I would want to do just dark grey suede where the red is on the 2014+ seats, and do a black "plain" cloth material on the outer sections of the seat or just leave the crazy Honda patterned fabric, red stitching.

Yeah....photoshop one looks better in the pic anyways. Sometimes things look better in pics than in person, or vise versa. Maybe even black out the little bar between the chrome and painted part of the grill.
I picked up the Fit used with 4,100 miles on it and it had the red H's on it and a Bluetooth kit too. The stiching was a time consuming but worth it in the end.

You can always swing by the dealership and pick up a bottle of the Honda interior cleaner. I believe its something like $12 and works for carpet and seats.
I've used it before on a black interior and worked nicely, but was not cleaning a coffee stain.
